Santokiri Chef Knife

This shorter chef is a cross between a Santoku and a Nakiri (hence the name Santokiri). It has enough knuckle clearance to be used on the board for chopping veggies but it is also compact enough to use for general kitchen utility stuff. The blade is hand forged from W1 Tool steel and it has an integral bolster (meaning it is forged from the same material). The blade is hand sanded to have a nice and clean satin finish and has a curved transition into the bolster. The choil/heal area (where the forefinger meets the blade) and the spine of the knife have a mirror polish and the top facets of the bolster are satin finished like the blade. For the handle I used a combination of Maple Burl and African Blackwood to create a very elegant handle that is sculpted to fit the hand perfectly. The wood is heirloom fit to the bolster for longevity and it is pinned with a peened nickel silver pin. This is a beautiful all around use knife for the kitchen.
